Carne salata Malenca
For the ‘Malenca’® we use the most precious cut of the leg of the beef that, cleaned and cropped, we salt and spice with mixed herbs typical of the territory.
We let it stand with its marinating for about a dozen of days, after that the single pieces are dried and slightly smoked.
At the end of the proceeding we obtain a tender product with a delicate taste. It could be served sliced more or less thinly, it depends on the personal tastes and the preparations: thinly sliced raw meat (“carpaccio”), seasoned with olive oil, parmesan cheese and lemon drops, thiny slices of white celery , rocket or whatever your fantasy tells you, one valid alternative is to accompany the ‘malenca’ with slight slices of grapefruit and some olive oil.
All these preparations could be enriched with porcini, cut with a tool used to slice truffles, and some pepper.
Other possible spices are:
· Seasoned ricotta sliced up
· Orange juice, it would be better if you use red oranges, salt, pepper, olive oil and grains of pomegranate
· Radishes cut up and some drops of aromatic vinegard.
